Sweet and Sour Chicken

A modern take on the typical Chinese dish, perfect for themed dinner parties!

Ingredients

Batter

  • 250gr / 2 cups flour
  • 2 tbsp oil
  • 2 tbsp cornstarch
  • 1 egg
  • 250ml / 3/2 cups water
  • 350gr chicken breast

Sweet and sour sauce

  • 250gr / 8oz canned pineapple chunks (keep the juice!)
  • 30gr / 1/4 cup cornstarch
  • 350ml / 3/2 cups water
  • 85ml / 1/4 cup honey
  • 120ml / 1/2 cup white vinegar
  • 1 green bell pepper
  • 1 red bell pepper

Instructions

Chicken and batter

  1. Combine the flour, vegetable oil, cornstarch and egg. Slowly mix in the water. Add some salt and pepper when you get a thick batter
  2. Cut the chicken breasts in small cubes and coat them with the batter
  3. Fry the chicken in hot oil and drain the oil

Sweet and sour sauce

  1. In a saucepan or wok, combine the water, vinegar, pineapple chunks and pineapple juice
  2. Slowly mix in the honey and cornstarch
  3. Turn the heat down when the sauce starts boiling and stir until the consistency is thick enough
  4. Cut the bell peppers in small cubes and fry them separately for 5 minutes
  5. Add the bell peppers to the sauce just before serving
