Perfect around Christmas time or whenever you fancy a great dessert, the gingerbread cake is always a good choice!

Ingredients

  • 320gr / 11.5oz honey
  • 1 egg
  • 110gr / 4oz butter
  • 130gr / 4.5oz milk
  • 270gr / 9.5oz flour
  • 9gr / 2 tsp bicarbonate of soda
  • 6gr / 1tsp powder cinnamon
  • 1gr / 0.2tsp powder clove
  • 1gr / 0.2tsp powder cardamom
  • 2gr / 0.4tsp powder ginger
  • 150gr / 5.3oz apricot jam (optional, for the topping)
  • 4 Candied orange slices (optional, for the topping)

Instructions

  1. Whisk the egg with the honey
  2. Preheat your oven to 165C / 330F / Gaz 3
  3. Melt the butter, and let it cool a bit
  4. Warm the honey in a saucepan
  5. Sift together the flour, bicarbonate of soda and spices
  6. Whisk the egg with the honey
  7. Add the milk and the butter, then add the spices and whisk again
  8. Pour the preparation in a cake pan
  9. Bake for 50 minutes
  10. Add a thin layer of apricot jam on the cake, and the candied orange slices
